No Bake Chocolate Mint Cookies

This recipe was part of my 12 days of Christmas cookies series in 2012. These no-bake chocolate mint cookies or boiled chocolate cookies are popular with kids and adults year-round. They can be flavored with a variety of extracts or just plain vanilla. I decided chocolate mint seems fitting for the holidays but feel free to use any other flavor you like. How about chocolate cherry or chocolate orange? Don’t those flavors sound yummy and festive too?

I’ve been making these for years and we think they are the best no-bake cookies! They are quick and easy, perfect for the summer when you don’t want to turn on the oven and heat up the house. You might know these chocolate no-bake cookies by another name such as boiled chocolate cookies, haystacks, buffalo drops or?

No-bake chocolate mint cookies directions:

Mix sugar, butter, salt, cocoa, and milk in a saucepan. Bring mixture to a boil and boil for 3 minutes, stirring constantly. Remove from heat and stir in oatmeal, coconut, extract, and nuts.

Drop by spoonfuls onto waxed paper and let cool until firm.

Ingredients

  • 2 cups granulated sugar
  • 1/2 cup butter or margarine
  • 1/4 cup cocoa
  • 1/2 cup milk
  • 2 & 1/2 cups quick cooking oatmeal
  • 1/2 cup shredded coconut
  • 1 teaspoon Watkins pure mint extract or pure peppermint extract
  • 1 cup chopped nuts

Directions

  1. Mix sugar, butter, salt, cocoa, and milk in a saucepan.
  2. Bring mixture to a boil and boil for 3 minutes, stirring constantly.
  3. Remove from heat and stir in oatmeal, coconut, extract and nuts.
  4. Drop by spoonfuls onto waxed paper and let cool until firm.
