Turkey Quiche

There are so many ways you can use up all that leftover holiday turkey, quiche is one versatile dish that can be eaten for breakfast, lunch or dinner. One of the things I love about quiche is you can add whatever fillings you like and have on hand and it’s great for using up small bits of leftovers when you don’t have enough to make a meal. This recipe is lower in fat as it doesn’t contain the cream or a pastry shell, which also makes it gluten free.

I like using a combination of colored bell peppers, I find the red, yellow and orange are sweeter than the green. Feel free to adjust the seasonings to your taste, the chili pepper¬†flakes give it a nice kick of heat but you can omit them if you don’t like spicy food.
