Turkey Quiche

There are so many ways you can use up all that leftover holiday turkey, quiche is one versatile dish that can be eaten for breakfast, lunch, or dinner. One of the things I love about quiche is you can add whatever fillings you like and have on hand and it’s great for using up small bits of leftovers when you don’t have enough to make a meal. This recipe is lower in fat as it doesn’t contain the cream or a pastry shell, which also makes it gluten-free.

Turkey Quiche

Ingredients

  • 10 eggs, slightly beaten
  • 2 bell peppers, chopped
  • 2 teaspoons of parsley flakes
  • 1 teaspoon of oregano
  • Salt and pepper to taste
  • 2 cups of diced cooked turkey
  • 2 tablespoons of onion flakes
  • 2 teaspoons of dried chili pepper flakes
  • 1/2 teaspoon of garlic powder

Directions

  1. Preheat oven to 350 degrees.
  2. In a medium bowl, slightly beat eggs and add bell peppers, parsley, oregano, turkey, onion flakes, chili pepper flakes, garlic powder and salt and pepper.
  3. Spray an 8 inch cake pan with Watkins non stick cooking spray.
  4. Pour quiche mixture into pan and bake until set. (Approximately 30-35 minutes).
  5. Cut and serve immediately.

Salt and Watkins black pepper to taste
2 cups of diced cooked turkey
2 tablespoons of Watkins minced onion flakes
2 teaspoons of Watkins dried chili pepper flakes
1/2 teaspoon of Watkins garlic powder

Directions: Preheat oven to 350 degrees. In a medium bowl, lightly beat eggs and add bell peppers, parsley, oregano, turkey, onion flakes, chili pepper flakes, garlic powder,  salt, and pepper. Spray an 8 inch cake pan with Watkins nonstick cooking spray. Pour quiche mixture into pan and bake until set. (Approximately 30-35 minutes). Cut and serve immediately.

I like using a combination of colored, sweet bell peppers. I find the red, yellow, and orange peppers are sweeter than the green. Feel free to adjust the seasonings to your taste. The chili pepper flakes give this quiche a nice kick of heat but you can omit them if you don’t like spicy food.
