Baked Apples Stuffed with Raisins and Pecans

My mother made baked apples for every fall when I was growing up. As a kid, these were not my favorite dessert but I ate them because, well what kid turns down dessert?!  My Mom always served dessert. We usually had some sort of home-baked goodie such as cake, pie, pudding, or canned fruit to complete dinner.  Cookies and squares were reserved for snacks served with coffee, tea or milk.

Honey Baked Apple Stuffed with Raisins and Pecans
Serves 4

Ingredients:

4 cooking apples, washed
2 tbsp soft brown sugar
1 tbsp pecan nuts, chopped
1/4 cup raisins
Dash of Watkins cinnamon and nutmeg
Honey (optional)

Instructions:
Preheat oven to 350 F.

Cut the tops off the apples, core, but make sure that you don’t cut all the way through. Score the apple skins around the center with the tip of a sharp knife.

Mix together the sugar, spices, pecans, and raisins. Stuff the apples with the mixture and drizzle with a bit of honey. Place the apples in an oven-proof dish, with a bit of water around them. Bake in the oven for about 20-30 minutes or until the apples are soft.

Serve immediately with a scoop of vanilla ice-cream or fresh or whipped cream.
